Recipe from "Old Southwest Mexican Chile Recipes" 

Chili Con Carne

 

 

2 pounds of lean pork or pork sausage

2 cups thick red chile sauce or chile Colorado

2 fresh jalapeño chilies stems and veins removed. Cut into small pieces.

2 tablespoons flour

1 garlic glove minced

1 medium white onion

1 teaspoon oregano

1 teaspoon cumin

1 teaspoon chili powder

1 teaspoon salt

8 ounce tomato sauce

6 ounce tomato juice

2 tablespoons olive or cooking oil

1 cup water

1/2 pound grated cheddar cheese

 

Directions

 

If using lean pork, cut into 1/2 inch squares.

 

Brown lean pork squares or ground pork in hot oil.  Do not remove excess oil or fat.  Add flour, mix well and cook for 15 minutes .

 

Put chopped chilies, garlic and onion in food processor and puree mixture. 

 

Place  food processor mixture with cooked meat and simmer for 15 minutes. 

 

Add oregano, cumin, chili powder, salt, tomato sauce, tomato juice and water together with meat mixture…bring to boil.  Reduce heat and simmer for one hour.  Add cayenne pepper to make hotter if desired.

 

Note:  Chili can be mixed and served with pinto beans.  Garnish with grated cheddar cheese and chopped onions.

 

This recipe can serve 4 - 5 adults.
